Marcy, sorry to hear. I don't know if Scoot was dead or not (it's not uncommon for them to clamp shut for ages). It's usually the STINK of a dead snail that gives it away.
Your tank doesn't sound overstocked at all, with only 3 fish in there. It sounds like it's a 25G long, from the dimensions you posted. Angels are notorious for nipping snail tentacles, though. Maybe Scoot was just hiding from the Angel?
I'd chuck the carbon, and replace it with filter sponge, which you can rinse out in the water you remove when doing the weekly waterchanges we all do. Carbon's basically useless after a few days, anyways.
Never ever ever "wash" the gravel, unless it's in TREATED tapwater or "used" tankwater!
