I have 1 single snail that has not been in contact with others apart from when it was a juvenile (over a year ago).... I woke up this morning and there were 2 eggs in his tank... WHATS GOING ON

The snail was released into the garden a couple of months ago because my girlfriend thought it was dead because it crusted over...
...A week or two later her mum found the huge snail crawling around the garden... Is it possible that it mated with a normal UK garden snail?

I'm not really the person able to help you with land snails...aquatic snails are my thing. What species of snail do you keep? If it's a GAL i'm pretty sure it wouldn't be able to cross breed with a Uk land snail since GALS aren't a native species. Perhaps your snail is able to self fertilize? I would have a read around previous posts on this site and see if you find the info the need until someone more experienced can help. Best of luck with the eggs.

Nice Fulica! (at least I think that's what you have, from pictures I've seen online, and the size of the eggs)
It is entirely possible that the eggs are infertile, due to there not being another snail to do the fertilisation, but then again, it's possible for these snails to "self-fertilise" but that's apparently quite rare.
What I've read to do to hatch them is to place the eggs into a small container, surrounded by damp spagnum moss, and kept nice and warm (25*C) for a few weeks.

yes it is possioble that it mated with a normal garden snail or it stored the sperm from when it was last with another snail which you said was over a year ago
i would like to see pics of the babies though
